Family Time at the Ranch
What a wonderful Easter Sunday with family at the ranch. There were eggs, sweet little girls, energetic little boys, beautiful big girls, and handsome big boys. Four generations in one place with a lot of new stories being made, some old stories being told. Ham and eggs, mashed potatoes, sweet potatoes broccoli and spear grass, asparagus for everyone else, a luscious banana cake and a yummy blackberry cobbler. I have always loved deviled eggs made with Easter eggs because they are so colorful. The food was good but the company was better. Treasure these times that are given to us and make the most of them for they don't come as often as they should in our busy lives. We spent the rest of the weekend checking on the baby sequoias, which are all fine, planting new trees, mowing the yard, and finishing small projects before diving into the living room. Living room is next!!!
Blackberry Cobbler
1/2 stick butter, melted
1 1/4 cups or more if you like your cobbler sweeter
1 cup flour
1 cup milk
2 cups fresh (or frozen) blackberries
Handful of semi-sweet chocolate chips
Preheat the oven to 350 degrees F.
In a bowl, whisk 1 cup sugar with the flour and milk. Whisk in the melted butter.
Rinse the blackberries and pat them dry. Pour the batter into the baking dish. Sprinkle the blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar, or more if you want your cobbler sweeter, and chocolate chips over the blackberries. Bake until golden brown and bubbly, about 1 hour.
